Our graduate training scheme lasts for 18 months starting in September. The scheme is split into
three modules to provide a detailed insight into all the departments that contribute to an individual
hotel’s success.
The first module is Food & Beverage covering Bar, Restaurant, Banqueting, Kitchen and Room Service.
During this module you’ll be trained in cellar management, stock control, menu planning, wine
knowledge, managing a function and food hygiene to name but a few. This on the job training will be
supported by workshops covering, for example, Core Standards, Health & Safety, and Up-selling.
The second module focuses on Front of House which covers Reception, Reservations, Concierge,
Housekeeping and Maintenance. You’ll cover Check In, Mystery Guest, enquiry handling procedures
and cleaning schedules amongst others and again this is supported by workshops on Core Standards,
Revenue Management and leading & managing teams.
The final module features specialist areas covering Finance, Human Resources and Sales &
Marketing. In Finance you’ll work with the Financial Controller learning about forecasting,
rostering and banking. In HR you’ll work with the hotel’s HR team and cover the
recruitment lifecycle, from attraction through induction, to performance excellence. In Sales & Marketing you’ll make sales calls, research competitors, support advertising campaigns and analyse guest feedback.
